I'm using KMail at the moment, and while it's good at what it does, it does have some niggly annoyances, in particular the fact that it can't automatically check for mail at a set time period (or is there a way?!).
What's the best graphical mail client in people's opinions?

Yes, in Settings -> Configuration -> Network, for each POP account you can check the "enable mail interval checking" box and then set the interval as you like.
I know you'll hear Evolution and Balsa and Kmail and others, but I've use a GTK email program called Sylpheed for a year now and it's great. Mainly because it has very low overhead, filters and multiple accounts work great, and it's stable as can be.

It's easiest to get Evolution through Ximian Red Carpet, if you have that. If not, you can get it from their FTP-site: ftp://ftp.ximian.com/pub/evolution/
