Question

Which proxy server do you recommend? I need a proxy server that has TCP/UDP mapping functions, HTTP, HTTPS, FTP, POP (best if I don't need to map), SOCKS4 AND SOCK5 support.

I've already tried JSentry, and I do not like it.
Runs as daemon and/or has a GUI, I don't really care right now if it is either.

The best (and unfortunately most difficult) solution would probably be to install/configure iptables (http://netfilter.kernelnotes.org/). This is the 2.4 kernel version of ipchains. It has excellent support for transparent proxing through NAT.
If you don't want to go that route the ipchains HOWTO recommends both:
TIS FWTK

SOCKS5

I have never used it, but here is a GUI frontend for iptables - http://expansa.sns.it/knetfilter/
